Banana Bread

175 degrees celsius, fan forced


  • 5 very ripe bananas
  • 1/3 cup coconut oil
  • 1/4 cup sugar of choice
  • 1 egg beaten
  • 1 tsp vanilla
  • 1 tsp baking soda
  • pinch of salt
  • 1 and 1/2 cups plain flour (can sub for gluten free flour)


  1. Mash bananas in a bowl
  2. Add ingredients one at a time -> flour last
  3. Grease and line loaf tin, pour mixture in
  4. Bake for 1 hour or until browned and cooked through
