Makes 12 cookies
Ingredients
- 170g cashews
- 80g tiger nut flour
- 100g organic maple syrup
- 40g macadamia oil
- 1tsp vanilla
- Pinch sea salt
- Pinch aluminum free bicarb
- 50-60g vegan dark chocolate chips
Method
- Fan forced oven at 175 degrees Celsius
- Use high speed blender to mill cashews (Thermomix – speed 9, 20sec)
- Add all ingredients, except chocolate chips
- Mix until well combined (Thermomix – speed 4, 15 seconds)
- Add chocolate chips and mix slowly (Thermomix – speed 3, reverse, 10 seconds)
- Bake on a baking tray for 12-14 minutes
