Wholefood Chocolate Chip Cookies DF GF

Makes 12 cookies

Ingredients

  • 170g cashews
  • 80g tiger nut flour
  • 100g organic maple syrup
  • 40g macadamia oil
  • 1tsp vanilla
  • Pinch sea salt
  • Pinch aluminum free bicarb
  • 50-60g vegan dark chocolate chips

Method

  1. Fan forced oven at 175 degrees Celsius
  2. Use high speed blender to mill cashews (Thermomix – speed 9, 20sec)
  3. Add all ingredients, except chocolate chips
  4. Mix until well combined (Thermomix – speed 4, 15 seconds)
  5. Add chocolate chips and mix slowly (Thermomix – speed 3, reverse, 10 seconds)
  6. Bake on a baking tray for 12-14 minutes
